You might think I meant to type “ego” for the title of this post but I did really mean to write Eggos. I grew up eating Eggo Waffles with Aunt Jemima syrup and Parkay spread. When I wasn’t eating that, other breakfast items included Toaster Struddle, Pop Tarts or an array of surgery cereal. Even though I know those items wouldn’t fuel me now, there still is a little nostalgia when I think back about being young and eating those comfort foods so was really excited when I got to borrow my friend’s waffle maker to make waffles when my sister visited. The version I made is a gluten free pancake/waffle mix and I use ground flax seed for the egg substitute. 1 TBSP of ground flax and 3 TBSP water equals one egg. We topped ours with fresh strawberries and pure maple syrup.
